No Sugar Added Banana Oat Muffins – Recipe

So I’m back on my “no added” sugar kick with the goal of sleeping better and hopefully losing some of this stomach pudge that doesn’t seem to want to go anywhere.

I’ve been on the hunt for snacks and substitutes for some of the things I love most. One of those is baked goods. They go perfect with a cup of coffee. But finding a baked good with no sugar? That’s really tricky.

Luckily there’s Pinterest. So I found a recipe for banana oat muffins and modified it a smidge.

And ta-da! Something super yummy that I feel good about eating.

No Sugar Added Banana Oat Muffins

Ingredients:
1 1/4 cups Oat Flour (I put 1.25 cups of regular dry oats in the food processor)
1 cup Oats
2 tbsp. Milled Flax Seed
2 tsp Baking Powder
1 tsp Baking soda
1/2 tsp Salt
1 Egg
3/4 cup Milk
1/3 cup unsweetened Applesauce
1/2 tsp Vanilla Extract
1 cup mashed Bananas

Mix dry ingredients together, then add liquids and mix well. Grease muffin tins. Bake at 350 for 15-20 minutes for regular muffins; 10 minutes for mini muffins. This recipe makes approx 2 dozen mini muffins or a dozen regular muffins – with about 4g of sugar per serving.

If you want them a little sweeter, you can add 1/4 cup of honey or a handful of chocolate chips to the recipe.

*Note: I also made these with Spelt Flour when I didn’t have enough oats to make the oat flour. They tasted about the same.

    I love that applesauce can be a natural sweetener. These banana muffins looks great for school being nut-free too!

    These sound tasty. I actually just made muffins yesterday and forgot about the old applesauce trick..I used the sugar!

    As for the sleeping, now that I’m trying to exercise more regularly, diffusing some relaxing essential oils and listening to guided meditation/relaxation at night, I find that I’m sleeping a lot better!

    This looks amazing and I cannot believe it has no sugar. They look so moist and sweet. I will have to try flax seed to some of my favorite baking recipes.

    These look delicious! I know that I’ve been noticing more and more how much sugar is in things, and I’m not a fan of sweet stuff, at all!

    This is a good idea. Who says you need to add sugar to everything to make it taste good. I want to try this recipe.
