How to Make Your Own Energy Bars

These days all you seem to hear about is people trying to save money and trying to eat healthier/greener. Unfortunately those two things don’t always go together as often times the healthier alternatives are more expensive.

But I have a recipe that I think will help with both that I wanted to share.  At the park a few weeks ago, one of the moms offered me a homemade energy bar full of yummy, healthy goodness.  I was a bit skeptical, but it was SO good – so good that I felt the need to share.

Your kids will love it too!  My 2.5 year old is proof.  We had a blast making them together, licking peanut butter off our fingers and sneaking a chocolate chip here and there.  Enjoy!

It’s simple!  All you need is:

2 cups uncooked Oats
1 cup peanut butter
1 cup honey
½ cup chocolate chips
½ Raisins/craisins/whatever you want
¼ cup flaxseed
¼ cup wheat germ
Mix in bowl, spread onto cookie sheet, cut into size.
Put into Fridge or Freezer.  (I freeze them and pull them out a few minutes before we want to eat them.)

    Thanks! We made some tonight. 🙂 I didn't have flaxseed, though. I added slivered almonds b/c I already had some. I also have a bag of Heath chips leftover from the holidays… I'll add those next time. Yum!
