I am a HUGE ice cream fan. Ask anyone who knows me.Sundaes, milk shakes, one scoop, two scoops, you name it. I’m there.
My favorites are mint chocolate chip and Oreo (not together), but I can persuaded any number of ways.
So you can understand when I learned about this upcoming event that I was bummed I won’t be around to attend. But that doesn’t mean that you can’t…
Looking for a super, yummy “adult” type sundae? Try Karen’s Sweet & Spicy Peach Pecan Sundae.
1 lb. frozen sliced peaches, thawed
1/3 cup sugar
1-1/2 Tbsp. prepared hot pepper jelly OR 1-1/2 Tbsp. peach jelly plus 1/2 tsp. finely chopped seeded jalapeno pepper
1/8 tsp. ground cinnamon
1/8 tsp. cayenne pepper
8 pecan shortbread cookies, crumbled
2 cups Breyers® All Natural Peach Ice Cream
1/2 cup sweetened whipped cream
Bring peaches, sugar, hot pepper jelly, cinnamon and cayenne pepper to a boil over medium heat in 2-quart saucepan. Reduce heat to low and simmer, stirring frequently, until peaches release their juices and are heated through; cool to room temperature.
To serve, arrange 1 crumbled cookie into each serving dish. Top with peach sauce, then Breyers® All Natural Peach Ice Cream. Sprinkle with remaining crumbled cookies then drizzle with remaining peach sauce. Garnish with whipped cream.
