We are HUGE ice cream lovers in our house. I mean, HUGE! So when Eagle Brand sent me some coupons for their condensed milk and asked me to try out some frozen treat recipes, I eagerly said okay.
We decided to tackle a Cookies & Cream ice cream recipe, and it was SO easy. All you need is FOUR ingredients. That’s it!
- 2 cup (1 pint) cold whipping cream
- 1 cup coarsely crushed chocolate sandwich cookies (9 cookies)
- 1 (14 ounce) can Eagle Brand® Sweetened Condensed Milk
- 4 teaspoon vanilla extract
WHIP cream in medium bowl with electric mixer on medium speed until stiff. In another large bowl, stir together sweetened condensed milk and vanilla. Fold in whipped cream and crushed cookies.
POUR into 9 x 5-inch loaf pan or 2-quart freezer-safe container. Cover and freeze 6 hours or until firm. Let stand at room temperature 5 to 10 minutes before serving.
I was a little nervous about the consistency. Would it be too hard? Too icy? Nope! It was incredibly creamy and rich, which is exactly what you want for Cookies & Cream ice cream. Summer may be ending, but this is one treat we can enjoy year round. We will definitely be making this again.
