
As I mentioned earlier this week, I am participating in a recipe challenge through Costco for National Pork Month. I (along with 47 other bloggers) was given a cut of meat (boneless chops or roast) and a theme (everyday dinners) and told to get cookin’.
If you know me at all, that’s a bit scary. I don’t do a lot from scratch. I use recipes….I don’t generally create them.
So first thing I did was hit up Costco for some pork chops. Then I asked my brother in law his favorite, most basic way to cook them (he’s a chef so yes I feel like I cheated a little). His suggestion: olive oil, kosher salt, pepper then throw ’em on the grill.
Easy peasy.
But I needed something more than that. I needed to fancy it up a little.
So being that it’s fall, I decided to do something with apples. I used to have pork chops and applesauce A LOT as a kid, so I figured it was a good combo.
My brother in law suggested some sort of apples and brandy sauce but I wasn’t that brave (plus I wasn’t sure the kid would like it.)
Instead, I took brown sugar, cinnamon and butter, melted it all together and then cooked the apples.

I like Rubbed and Grilled Pork Loin
I have a great pork recipe that I actually got from my mother in law. You saute pork chops with onion. At the same time you cook rice. When both are done, you pour the rice on top of the pork chops and rice and then put some butter/margarine on top to melt through. You then pour a can of tomato soup on top, cover the whole mixture and let sit for about 5 minutes. I was skeptical the first time I ever tried it but sooooo good, and a great cooler weather meal!
I absolutely love pork chops. My mom always bread them and fries them. Yum!

I haven’t made pork chops in so long. The last time I used orange juice along with some seasonings. I don’t remember the exact recipe since it’s been so long. But last week I made some spicy pulled pork, recipe courtesy of the Pioneer Woman, oh wow, it was amazing!
we like to grind up pork and make dumplings!
I love my crockpot for pork loin; I add two cans of cream of mushroom soup, some spices and a can of water. Add sliced onions, carrots, and peeled and cubed potatoes and leave it on low all day. Makes a great, easy and tasty Sunday dinner.
Fry ’em up. Pair with a nice light beer. Or Jagermeister.
I love pork ribs in the crockpot, it’s so easy, just brown them in the broiler, then put them in the crockpot with barbecue sauce. So easy and so good!!
pork chops with sauerkraut!
I love cooking pork tenderloin. It’s so easy to prepare, just marinade in a resealable bag a few hours or overnight (6-12 hours), then pan roast in the oven. I usually cook 2 at a time and use the 2nd one for a few other meals like pork and veggie stir fry and pork sandwiches.
I like putting a dry rub on pork tenderloin then roasting it in the oven.

I like teriyaki pork chops and a side of rice…I make my own teriyaki sauce and marinate it for 2 hours in the fridge then I grill the pork on a castiron grill pan and serve it with a side of vegi and medium grain rice…

I cook my pork Chops in Orange Juice. I slowly cook them in a frying pan letting the pork chops get sticky. I add more juice again and cook them until they are very sticky. Usually 20-30 mins depending on the thickness. I cook on med heat. Make sure it is not too high, you don’t want the juice to cook too fast. I also throw in some orange slices.
Love Tonkatsu (boneless pork chops breaded in panko and fried up!)

Kalua pork is a staple in Hawaii. I like preparing it in the oven or slow cooker – very easy and so tender.

I like grilled bbq pork ribs
We like to fry it up in a pan so it’s nice and brown and then put apricot or mango preserves on top. A little sprinkle of cinnamon is great, too!
I actually made the costco pulled pork last night and my daughter looked up from her plate and said “Mommy. I’m obsessed with this meat”
