Tater Tot Casserole – It’s What’s For Dinner

Dinner time is hard for me.  It was hard when I working and it’s hard now that I’m home.

I’ve gotten much better about planning most of our meals for the week, but we end up having the same thing over and over.

Case in point.  Last night we had Tater Tot Casserole.  It’s awesome.  We have it at least twice a month.

Yummy, easy and did I mention easy?

When I first got the recipe from a fellow mom, I was super doubtful.  Tater tots and ground beef?  Skepticism lingered as I cooked.  But one bite and I was sold.  The whole family loves it.

I was asked to share so here you go…

1.5 lbs ground beef

1-2 cans of cream of mushroom soup (2 if you want it really creamy!)

1 bag tater tots

1-2 cups chopped broccoli (frozen or fresh works)

1 cup cheddar cheese

Pre-heat oven to 400. Brown the ground beef and put into a casserole dish.  Mix with Cream of Mushroom Soup.  Add broccoli atop the beef/soup mixture.  Then strategically arrange the tater tots across the broccoli.  Bake for 35 minutes.  Add cheese to the top and bake for another 5-10 minutes until tots are browned and cheese is melted.  ENJOY!*

*Hubby tops it off with ketchup.  (Blech!)

    Can the tater tot casserole be assembled then frozen for baking at a later date? I need to prepare some freezer meals.
